Moussaka-Vegetarian and Nonvegetarian



Ingredients:           
  • 2 large eggplants (brinjals)-cut into discs and then into semicircles
  • 1 large potato, peeled and cut into thin discs, and then into semicircles
  • 2 large onions, thinly sliced into discs
  • 200 gram minced meat, washed and drained
  • 1 large onion, chopped fine
  • Half cup thick tomato puree
  • 10 flakes garlic, chopped fine
  • 1 tablespoon mixed dried herbs (or oregano, parsley, thyme)
  • 2 tablespoons butter
  • 2 tablespoons plain flour (maida)
  • 1 cup milk
  • Salt and pepper to taste
  • Cheese to be grated on top
  • Oil for frying
Method:
  • For the brinjals-after they are cut, sprinkle salt on them and let them rest for 15 minutes (to drain out excess water and remove any bitterness). Then either deep fry them in hot oil or shallow fry them, until golden brown on both sides. Remove and place them on paper towels to drain out excess oil.
  • For the potatoes-after they are cut, either deep fry or shallow fry until golden brown on both sides. Drain on a paper towel.
  • For the 2 large onions-after they are cut, shallow fry until golden brown and keep aside.
  • For the meat sauce-Heat oil in a pan. Tip in the garlic, fry till the garlicky smell wafts out. Add the onions (chopped fine) and fry till translucent. Then add the minced meat and fry till brown in color. Add the dried herbs, salt and pepper to taste and cook with the lid closed till the meat is done (you could also pressure-cook this for 15 to 20 minutes).
  • To make the bechamel sauce-Melt butter in a pan. Add the flour and stir around till a little brown. Then add the milk, salt and pepper to taste (add less salt if using salted butter). Make sure it doesn't become lumpy. It should be a nice creamy consistency. You could add cheese to this to make it a cheese sauce too.
  • To assemble-In a baking dish, assemble half the brinjals in a single layer, top with the meat, put the tomato puree in blobs over the meat, then top with the fried onions and potatoes, another layer of brinjals, meat, and tomato puree. Finally top with the bechamel sauce. Grate cheese on top.
  • Preheat oven to 200 C and bake for 20 to 30 minutes, until the cheese has melted to a golden brown.
  • Enjoy this with a green salad and toasted bread (hot garlic bread would be wonderful).
For Vegetarians:
Instead of the minced meat, use soya granules, soaked for 10 minutes in hot water and drained, then cook as for the meat sauce above. Layer with brinjals and potatoes.
For a full-on vegetarian version (recipe courtesy Neeraja chechi)-use a cup of mixed vegetables like carrots, cauliflower, mushrooms, tomatoes (no need to add tomato puree). Add a vegetarian stock cube and fry as for the meat sauce above (you could omit the soya granules). Layer with brinjals and potatoes.

For the calorie conscious:
Instead of frying the potatoes and brinjals, bake at 180C for 15 to 20 minutes or until brown.
Substitute zucchini for the brinjals.

Puliyodharai(Tamarind Rice) - Tamil Brahmin Style



Ingredients:
  • Rice: As per your need.(To be cooked separately).
  • Tamarind Pulp(thick): 1/2 cup.
  • Turmeric powder/Haldi : 1/4 tsp.
  • Asefoetida /Hing: 1 - 2 pinches.
  • Roasted Peanuts,skinned: 1/4 Cup(Actually 1/2 tastes really good, but i felt it's a bit too much of pea-nutty taste).
  • Bengal gram/Chana Dal: 1 & 1/2 Tbsp.(Dry roasted & coarsely powdered).
  • Black Gram, split & Skinned or Urad Dal: 1 & 1/2 Tbsp.(Dry roasted & coarsely powdered).
  • Dried Red Chillies, Halved: 7 - 8 nos (Dry roasted & coarsely powdered).
  • Coriander Seeds / Dhaniya (Whole): 1 Tbsp(Dry roasted & coarsely powdered).
  • Fenugreek Seeds/Methi: 1/4 Tsp (Dry roasted & coarsely powdered).
  • Dry Coconut: 100 gms(Grated,Roasted & coarsely ground).
  • Cinnamon Sticks/Dalchini: one 1" stick(Dry roasted & coarsely ground).
  • Cloves/Lavang: 4 - 5 nos.(Dry roasted & coarsely ground).
  • Black Sesame seeds/Black Til: 2 tsp(Dry roasted & coarsely ground).
  • White Jaggery: one 2" block(about 50gms, coarsely powdered, use the cleaned variety so you need not worry about cleaning it).
  • Cumin seeds/Jeera: 2 tsp(Dry roasted & coarsely ground).
  • Sesame Oil/Any Oil of your choice: 1/2 Cup(i used Olive).
  • Salt: 2 teaspoon(but it's always better to taste and add if required).
For Seasoning:
  • Mustard Seeds/Rai: 1/4 Tbsp.
  • Black Gram/Urad Dal: 1/2 tsp.
  • Bengal Gram/Chana Dal: 1/2 tsp.
  • Dried Red chillies, Halves: 4 -5 nos.
  • Curry Leaves/Karripatha: 15 - 20 nos.
Method:
  • Cook Rice separately as per your need, and set aside to cool, it would taste better if each grain is separate.
  • Soak tamarind well in advanced, squeeze out the thick pulp and sieve well.
  • Dry Roast & Coarse grind Chana dal,Urad dal,Peanuts,Red chillies,cinnamon stick,cloves,jeera,Black Sesame seeds, together.
  • Dry roast & coarse grind Fenugreek seeds,coriander seeds and set aside separately( please remember to use this powder in measured quantity only even a little more of this can turn all of the mixture bitter).
  • Heat 2 -3 table spoons of oil,add all the powdered ingredients and allow to fry well until you get aroma.
  • Add Hing,Turmeric powder(optional), now add 1 tsp of the powdered fenugreek & coriander powder which was set aside ,then add Salt and add all of the tamarind pulp, allow to cook well to let go off the raw smell of tamarind, add jaggery.
  • Cover and simmer in a non - stick pan over low flame for 7-10 minutes,The best way to check if cooked is when the oil shows up on the surface.
  • Take a separate pan for seasoning and add all the remaining oil splutter, mustard seeds, dry red chillies,chana dal,urad dal,& Curry leaves, take it off the stove.
  • Mix with the tamarind sauce which is cooking & remove from stove.
  • Mix with cooked rice as per requirement and you could garnish it with,fried or roasted peanuts.
  • Serve Hot & Enjoy..;)

Orange Cake



Ingredients:

1 cup whole wheat flour
1/2 cup refined vegetable oil
1 egg
1 cup powdered sugar OR 3/4 cup granulated sugar (I used powdered)
Juice of one Orange
Zest of one Orange
a pinch of salt
1 1/2 tsp baking pwd
1/2 tsp soda/ sodium bicarbonate
1/2 tsp vanilla essence
1/2 tsp orange food color (optional)

Method:


  • Step 1: Get the zest of one Orange. I used a fine grater for this. Make sure you grate only the upper part & no white part of the Orange...else it will add the bitter taste to the cake.
  • Step 2: Put the pressure cooker on the gas top to pre-heat as explained in previous post. Prepare the batter till then.
  • Step 3: Sieve the flour, baking pwd & soda. Mix well. Set aside.
  • Step 4: In a mixing bowl, mix the sugar & oil till creamy.
  • Step 5: Add egg & continue to beat till frothy.
  • Step 6: Add vanilla essence, food color & mix well. Add orange juice, orange zest, salt & continue mixing.
  • Step 7: Add the flour mixture in batches. Do not overbeat now. Just mix well.
  • Step 8: Grease the pan & pour the mixture into it. Put it inside the cooker.
  • Step 9: Cover with a plate placed upside-down.
  • Step 10: Bake of a medium flame for 15 mins. Reduce the flame & bake for another 5 mins or till the knife inserted comes out clean. Its ready!! :)


American Chopsuey



Ingredients:

Noodles- 200 gm,take as you need
Egg- 2
Cut vegetables- 1 1/2cups(carrot,capsicum,cabbage,mushroom,cauliflower)
Ginger- 2 inch piece,finely cut
Garlic- 4 pods,minced
Onion- 1 medium,thinly sliced
Cornflour- 2 teaspoon
Vegetable/chicken stock- 1 cup
Minced chicken- 1/2 cup
Salt- 1-2 teaspoon, as required
Pepper powder- 1-2 teaspoon,as required
Tomato sauce- 2 tablespoon
Chilly sauce- 2 teaspoon
Soya sauce- 1 teaspoon
Water
Oil- for frying noodles

Method:


  • Cook the noodles as per instructions, drain water and keep aside. 
  • Heat oil in a deep bottomed pan and fry noodles little by little till crisp. Do not make it too solid.Drain oil and set aside 
  • Heat 1 tablespoon oil in a pan 
  • Add the minced chicken pieces and fry for 2 mins. 
  • Add the onions,ginger,garlic and saute till soft. 
  • Add the cut vegetables and saute till they get cooked , but remains crispiness 
  • Meanwhile mix the corn flour with chicken stock, all sauces, salt and pepper to a fine consistency. 
  • Add this to the cooked vegetable chicken mix. 
  • Add 1/4 cup water,mix well 
  • Cook till the sauce attains a thick consistency. 
  • Just taste it and add more salt or pepper if required, I added 1 teaspoon more pepper. 
  • Now heat a non stick pan and make bulls eye with egg, salt and pepper. 
  • Bring the fried noodles to a serving plate , top them with the prepared sauce and throw the bulls eye on top. Serve hot!.


MUSHROOM ROAST



Ingredients:
Button mushroom(fresh):250gm,(sliced or chopped)
Coconut oil:2 1/2tbs
Thin coconut slices:100gm
Finely chopped shallots:175gm
Finely chopped ginger:1 1/4tsp
Finely chopped garlic:1 1/4tsp
Green chili:1,sliced
Curry leaves:A sprig
Finely chopped tomato:50gm
Kashmiri chili powder:3/4tsp to 1 1/2tsp...adjust to spice level
Coriander powder:1tsp
Garam masala powder:1/2tsp
Turmeric powder:2pinches
Black pepper powder:1/4tsp
Thick coconut milk:1/4cup
Salt,to taste

Method:

Wash the mushrooms quickly under cold running water and pat dry immediately with paper towels.slice or chop them.
Heat the oil in a non-stick kadai.Add coconut slices and fry until golden brown.
Add shallots,green chilly,ginger,garlic and curry leaves and continue to fry until onion becomes golden brown..
Now add chopped tomato and cook till tomato begins to soften.
Add all the spice powders and stir constantly till the raw smell goes off.
Now add mushroom slices and enough salt .Mix well and then add coconut milk.Cook covered on medium fire until 80% done,stirring twice
Remove the lid and continue to cook until the mixture is almost dry,stirring occasionally.
Serve with rice/rotis...

All in All Chicken



Ingredients:

Chicken (boneless) - 250 grams(small pieces).
Salt- as needed.
Yogurt - 1 tsp.
Lemon - few dropes.
Ginger-Garlic paste - 1 tsp.
Red chilly powder - 1 tsp.
Coriander powder - 1 tsp.
Pepper Powder - 1/2 tsp.
Kasoori meethi Powder / dried fenugreek leaves - a pinch.
Cumin Powder - 1 tsp.
Garam masala powder - 1 tsp.
Chat Masala - 1/2 tsp.
Turmeric powder - 1/2 tsp.
Redd color powder - a pinch(optional).
Oil - 1 tsp(for marination).
Oil - 2 tsp(for cooking).

Method:


=> clean, remove excess water n pat dry the chick the chicken pieces.


=> Add in all the ingredients n mix thoroughly with the chicken.

=> Let the mixture marinate for 10-15 minutes.

=> Now, heat 2tsp of oil in a pan, add in the chicken marinate n stir in occasionally for 3 minutes.

=> Now the water oozes out from the chicken, close the lid n cook the chicken on medium flame till done.

=> when it's done, open the lid and dry up the water on high flame till chicken turns slight golden brown (make sure the chicken is not burnt). It's done

Tip 1: can serve it with sauteed bell-pepper fresh coriander leaves for some more taste n color.

Tip 2 : cut the prepared chicken into small pieces, combine with ur favorite vegetable salad to give in a extra zing...
