Corn in Onion Sauce



 
Ingredients:
  • Corn cobs - 1
  • Onion - 1 medium sized
  • Ginger garlic paste - 2 tsp
  • Curry leaves - 3 to 4
  • Jaggery Syrup - 2 tsp or as per taste[Dissolve jaggery in water to form a thick syrup]
  • Turmeric powder - a pinch
  • Chilli powder - 2 tsp
  • Jeera - 1/2 tsp
  • Yogurt/Curd - 3 tbsp
  • Oil - 3tsp
  • Salt to taste
Method:
  1. Boil the corn for 5 vessles in cooker - I did this as I didnt want to deep fry them. I usually feel very guilty to pour more oil for frying.......exception for vadais and few other items :)
  2. Slice the corn into 1 inch pieces. I used normal corn, not sweet corn so it was a very tough time to cut them so I cut only 1 slice for pic sake others I shaved them into pieces like below:
  3. Grind onions to a fine paste. Now add ginger garlic paste, turmeric, chilli powder, jeera, curry leaves and jaggery syrup to the onion paste. Mix well and keep aside.
  4. Saute the corn in 1.5 tsp oil for 5mins and keep aside.
  5. Now add the remaining oil and fry onion paste mixture till oil seperates, it may take some 10 mins.
  6. Lower heat and add curd/yogurt. Simmer only for 2-3 mins to avoid curd from curdling. Add salt and remove from fire.
The hot and sweet juicy corns were soo tasty and different! Even we had it as such :)

Veg Burger


 
Ingredients:
  • Bun - 2
  • Chopped cabbage - 3 tsp
  • Tomato sliced - 2
  • Onions sliced - 3 to 3
  • Tomato sauce - 2 tbsp
  • Cheese - 2 slices or shredded cheese
 For the patty:
  • Veggies - 1.5 cups (I used 2 big sized carrots,5-6 beans and 2 potatoes)
  • Aniseed powdered - 2 tsp
  • Finely chopped onion - 1/2 small sized
  • Ginger garlic paste - 3 tsp
  • Chilli powder - 3tsp
Method:
  1. Boil the veggies till mashy. Drizzle oil in a wide bottomed pan, add aniseed powder,immediately add chopped onion. Then add boiled carrots and beans, saute them for 3mins.
  2. Add ginger garlic paste,fry well.Add chilli powder and salt.
  3. Now add this to mashed potatoes and bind them well.
  4. Flatten them into patties and toast it in dosa pan. You can deep fry them if you arent guilty :)
  5. Assemble the burger in the following order / any order of your choice:
  6. Keep one half of the bun first, then the pattie, cheese slice, chopped cabbage, a slice of onion, tomato sauce then tomato slice and the other half of the bun. Your veg burger is ready! Isnt that quick n easy?!

Nutty Marie Biscuit Dessert



Ingredients:
  • Powdered Marie Biscuits - from 5 biscuits
  • Sweetened Condensed Milk / I used thickened milk- 4 tbsp
  • Coco powder - 2 tbsp
  • Chopped Cashewnuts - 5
  • Butter - 1 tsp just to grease
 Method:
  1. Grease the container with butter.
  2. Layer the powdered marie biscuits into the container and press it till it is even. It will be 1 inch in thickness if you are using 5 biscuits.
  3. Pour the condensed milk covering the powdered biscuits. I didnt have condensed milk and that didnt stop me from trying it....so what I did was I thickened the milk with 1tsp of sugar added and used it, no compromise in taste.
  4. Next layer is the coco powder. Sprinkle it until the condensed milk layer is totally covered. Then lay the chopped cashewnuts on the top of the coco powder layer.
  5. Bake it for 10mins. It came out just fine in my oven itself...so am sure it would come out well in any oven ;) Cool it and serve.

Baked Nippattu / Savory Onion Crackers - Recipe of the week - 14th December

 Baked Nippattu / Savory Onion Crackers by Supriya from RedChillies
 

 
 
Ingredients  
  • 2 cups of maida (All purpose flour) 
  • 1/4 cup water (warm) 
  • 4 tsp sesame seeds 
  • 1/3 cup oil 
  • 4 Tbsp butter (melted) 
  • 1 big onion(finely chopped) 
  • 1 tsp baking soda 
  • 3 green chillies (finely chopped) 
  • Handful of chopped coriander leaves 
  • 2 tsp Sugar 
  • 1 tsp Salt
Method

Take a big plate and put in maida, sesame seeds, onions, salt, sugar, soda, chopped coriander leaves, green chillies and mix well. Add the oil and spread it to the mix. Do the same thing with melted butter also, big and uneven lumps will form but that is ok.


Now add the warm water and make thick dough. At this point if you feel there is too much onion, do not worry, the more the better taste. Knead well for about 2-3 minutes and cover this with a damp cloth. Keep it aside for 30 minutes.

Pre-heat the oven to 325 F.

Now from the dough that is already prepared, we need to roll out flat discs. Rolling out like chapathi/roti did not work out for me.

So instead I took small balls on dough and placed it in between 2 greased plastic sheets. Apply pressure and make it into flat disc. Remove the top cover and with the tip of your hands flatten the dough and make it as flat as possible.

Take a round cookie cutter or any small round lid and cut out small rounds. Repeat this process for the remaining dough as well.

Place the round cut outs on a greased cookie sheet. Make sure to poke holes on all of them with a fork, this way the cracker will not puff and also the air will go out while baking.

Bake for about 25 to 30 minutes until they are brown.

We are really happy to annouce our "Blog of the week"; its RedChillies



Red Chillies is an online dashboard for sharing simple, healthy, tried and tested vegetarian recipes. The blog features North Indian, South Indian, Konkani and International recipes. It is a very clean, well organized blog containing recipes with clear instructions.

This blog is maintained by Supriya, who comes from Bangalore and is currently located in Texas, United States. It was about 3.5 years ago that Supriya found this medium of blogging. After giving it a lot of thought she decided start blogging herself and use this platform as a way of recording of her own recipes and the recipes that she has learnt from her family (more like an online cookbook). Through her blog she is able to record her success, mis-trials, failures etc and refer to them whenever she wants to.

Even though she likes Italian and Mexican cuisine, her all time favorite is Indian Cuisine.
Some of her favorite recipes are:

Moong Curry and Cucumber Idli (Mooga Ghashi & Tausha Idli )
Poori and Vegetable Saagu (Karnataka Style)
Eggless Mango Cake
Methi (Fenugreek) Rice

Currently blogging is her main hobby, her passion and she is enjoying it very much. Through this medium, she is glad that she has been able to share recipes with so many people around the world.

She is also a mom to a mischievous 4 year old boy and works full time for a software company. Her husband has been instrumental in her blogging and encourages her to try out new things.

Indian Vegetarian Kitchen



We are really happy to annouce our "Blog of the week"; its Indian Vegetarian Kitchen



Indian Vegetarian Kitchen is a great blog featuring a wide variety of recipes; from simple everyday cooking to desserts, chats, North Indian as well as some international dishes.

The blog features a large collection of delicious, healthy and easy to make recipes including entrees, appetizers and desserts. The blog is maintained by Mahimaa Ramkumar who is currently located in United States. She originally comes from Chennai, India.

Her love for cooking made her experiment different recipes and she wanted to share her favorite recipes with the world. Hence, Mahimaa started blogging in September 2007 and in a very short period of time has achieved great success with her blog. Indian Vegetarian Kitchen has been featured on Sify.com and has won awards in many blog contests. One of Mahimaa's recipes was published in a daily Tamil newspaper in India.

Her favorite cuisine is Indian eventhough she enjoys Italian, Thai and American food. Some of her favorite recipes are Paneer butter masala, Malai Kofta, Baingan Bhartha, Malaysian noodles and vegetable pulao. You can find all these recipes on her blog.

When we asked her what the most flattering comment she has received on her blog was, she said that her friends feel she should start a restaurant! Well Mahima, we agree!! The dishes look so delicious in the pictures, we are sure people would love to try them out at the restaurant. Other than recipes, she has also received specific compliments on the photography.

In her spare time, she likes to read books, listen to music, watch Food Network and of course cook! She says "The difference between a good dish and a great dish is the amount of passion you put into it. So cook away with love!"

Pineapple Kesari - Recipe of the week - 7th December

Ingredients: 
  • Sooji/Rava/Semolina-1/2 cup
  • Sugar-1/2 cup
  • Water-1 cup
  • Ghee(clarified butter)-2 tbsp
  • Cardamom-1/4 tsp
  • Saffron-a few strands
  • Pineapple pieces chopped finely-1/4 cup
  • Milk-2 tbsp
  • Chopped nuts(almonds, cashews)-1 tbsp
  • Raisins-2 tsp
  • Food color(any color)-a pinch(pink used here)

 Method:

Soak saffron in warm milk. In a vessel, bring water and pineapple pieces to a boil. In a pan, melt butter and make ghee. Roast nuts and raisins in ghee and transfer the mixture to a bowl. Return the pan to stove. Roast rava on low flame for 5-6 minutes. Add cardamom, saffron-milk, boiling water(with pineapple pieces) and food color. Keep stirring while pouring hot water to avoid lumps. Cook for a minute. Add sugar. Stir well and cook for 2 minutes. Add half of the ghee+nuts mixture and mix well.Before serving kesari, top it off with remaining ghee and nuts.

Note: You may also add a few drops of pineapple essence to make it even tastier. Instead of adding pineapple, you can make plain kesari and add a few drops of almond essence.
